First off, let’s distinguish the difference between gluten intolerance and Celiac Disease.
Celiac Disease affects less than 1% of the population. It is an extreme allergy to gluten that can cause malnutrition, stunted growth, severe neurological conditions, and even death.
Much more common is gluten intolerance. Symptoms of gluten intolerance fall along a spectrum and can vary widely in terms of sensitivity. They include:
-Digestive issues, bloating, diarrhea
-”Brain fog,” or difficulty concentrating and trouble remembering information
-Frequent headaches
-Anxiety, increased depression

-Skin issues, including dermatitis, eczema, rosacea, and rashes
